Västerbottensost® is a Swedish grainy hard cheese made from northern cow's milk and manufactured at the small dairy in Burträsk in Västerbotten. It has a characteristic, full flavor and a shelf life of at least 14 months. Difficult to slice, but still loved for sandwiches as well as grated in cooking for pies, tacos or gratin. Also excellent on a cheese platter! The cheese has been produced since 1872 when the dairywoman Ulrika Eleonora Lindström created the secret recipe. Since 1990, Västerbottensost® has been a Royal Court supplier and has been served at many royal functions and the Nobel dinner. Västerbottensost® is simply a unique piece of Swedish food history.
